little snicker pieces atop caramel ice cream with a graham cracker crust...yum

I found this recipe on the Real Simple website while Googling "snickers ice cream pie."  It is very simple as the magazine indicates and a perfectly wonderful treat in the heat...more please. 

A few notes: Line up the Snickers pieces so it will slice easily once frozen, I did two layers. Put the ice cream on, then line up pieces of graham cracker to be the bottom. I think chocolate cookies would be good here, too.

Yesterday his work on malaria was published in Science. The long hours, collaborations between continents, and heart that went into this research is amazing, just like Case, an amazingly talented human being. I feel lucky and proud to be sharing the experience of this sweet life with him.  ( you did it! xo)

A homemade lemon tart for Case (there are a few more so I get some, too). We shared a lemon filled donut last week and since then we both have been craving more lemon, so I found a recipe here and adjusted it for tiny tarts and even made a quino-almond gluten free pastry shell.

I had too many carrots in the fridge that just weren't getting eaten so I thought I'd make something sweet from them as they would be sure to get eaten then, which led me to this carrot cupcake recipe. I frosted them before bed last night and packaged some to give away with little curly carrot adornments.

mmmmm...I made Mango Berry Pie today, with a coconut almond crispy top. It looked so good I had to have a piece as soon as it had cooled enough.  I am trying out this curry recipe for the first time, too, a nice lady at the yarn shop recommended it. I think it must be that Top Chef is on tonight, makes me want to try out new recipes.

what's for dinner?
Tonight's menu included vegetable lasagna, I even replaced the noodles with sliced eggplant (inspired by Rachel Ray and gluten free recipes) and an apple crumble with some of my own modifications (quinoa instead of oats, added coconut and substituted chopped pecans).  All the time in the kitchen was worth it, soooo delicious!

sweet tooth
I wasn't having much of my normal sweet tooth this week, but today it came back. I have been savoring these exquisite lavender sea salt caramels (two of my favorites in one) since Christmas...so then there was one.                                                                                                                     
In addition to enjoying some sweets, Case and I are on a mission to see as many movies as we can in three days, which may only be three, not very amazing, but still very rewarding. Last night we saw Milk, and I'm glad I've had a full day to really appreciate it before seeing The Wrestler tonight. Then off to Revolutionary Road tomorrow, and if we had just one more day before the Charger game and Golden Globes (Sunday) I think Frost/Nixon would've made the cut...at least we'll see it before the Oscars. Happy Weekend!

Each year Case and I enjoy putting together baked goods for the people he works with.  This year's boxes included Case's Elf Cookies, Angelettis, Chocolate Gingerbread Bars, Chocolate Espresso Snowcaps, and Lemon Pistachio Wreaths. In retrospect I may have eliminated the lemon wreaths and included my mom's mint chocolate cookies, I think it needed a little mint to balance out the selection. As you can see I have been away from the computer as I was in the kitchen baking up a storm then resting and receiving goodies and cards in the mail, like the felt ornament from Holly in New York, I think it's my ninth one from the ornament swap, the Bumble looks so sweet holding it. Happy holiday making...

pumpkin puddin'
I think there are a few pumpkin puddingish recipes floating around this season. I've heard of others and that they tasted delicious, so when I saw Rachel Ray making this on Thursday I thought I would make it, too. Hope it is good, off to share it with friends. Plus a bonus picture of sweet Ladybug getting her afternoon sun with a bit of catnip nearby.        
**later: The pumpkin pudding was delicious, would definitely make it again! I added toasted pecans, whipped cream and a dash of nutmeg on top.**

squash delight
What to do with a butternut squash when you meant to purchase a spaghetti squash?? I just did an internet search for "butternut squash dessert" and found a simple recipe I think will be sweet with a scoop of vanilla ice cream and toasted coconut on top. I made a small adjustment to even make it gluten-free. Then I went back to the store and got the spaghetti squash I wanted to make this for dinner. The tasting hasn't happened yet, but maybe I'll add a note after posting to let you know how the squashy dinner and dessert turned out.
